ACF Far North Queensland Branch (ACF FNQ)

After almost expiring in the last months of 2005, the FNQ Branch has had a new burst of support and now has a membership of 25, a figure that continues to grow. Its office bearers are Brian Down (President), Brian Maclellan and Jos Thys (Vice Presidents) and Graham Harris (Secretary/Treasurer). The Branch meets on the last Wednesday of the month for lunch and usually more than 40 members, their guests and the media attend.

ACF FNQ has also held a Secondary Schools Culinary Challenge for the last seven years and will be conducting another this year. The date for this has not yet been finalised. The Branch also hopes to become involved with Salon Culinaire this year.

Australian Culinary Federation - Newsletter / report .10th July Nestlé Golden Chefs Hat “Clockwork”, which is the only word that can describe the Cairns Tropical North Queensland Region competition Brian Down, President ACF Queensland North and his back up ACF team members spared no effort to ensure that every aspect of their competition was perfect On Friday  6 July afternoon, two ACF members and other institute staff were ready to assist with the assembly of Nestlé products, black box ingredients, preparing stores ingredients, marking workstations and trolley assembly ready for the competition the following morning. The restaurant had been allocated for the presentation function and was a benchmark setup and included a PowerPoint of activities of the local ACF, a clothed display table for display of Nestle products, an exhibition of rare cookery books and a row of numbered dressed tables for competitors to use to present their finished dishes. Four pictures show Taste judges, WinnersAn entry Room setup Next morning the judges all arrived on time as requested ready for a long day. I am delighted to announce three bronze and two silver medals were deservedly presented to the Tropical North Queensland teams. The winners: (from a “combined property” team) Sophie Gray from the Reef Hotel Casino and Brianna Bree O’Reilly from the Sheraton Mirage had won the day on what is the closest possible result. We had to double check all mark sheets and discuss every aspect with front and back of house judges to ensure the aggregate winning margin of the unbelievable .3 of 1 percent (one third of one mark) was correct for the winners.

 A delightful presentation followed with over 60 people attending the presentation with much cheering and an almost speechless winning team with tears when they were finally identified by Nestle Area Manager Keith Buxton.  Even the photos that had been taken through the day by ACF members were burnt onto a CD and a number distributed during the presentation. WIN TV unobtrusively filmed a part of the competition at the time of the entrée presentation and a visit from the local papers (both I understand initiated by the ACF Chapter) will provide a very fitting high profile of the competition. A great competition, well done Brian and please ensure that all your committee and Institute staff are congratulated and thanked again for their efforts. Onward, next day straight to Darwin as the competition unfolds across the country.  It always amazes me that the staff and Institutes from the smaller communities like Tropical Queensland and Northern Territory place a great deal of effort and enthusiasm to provide their hospitality communities with the best possible experience.  Immaculate workstations, commodities already checked and ready for use, function room beautifully set up, invitations to their local community followed up and every aspect checked and double checked.   There was some confusion at the start at NT as some teams had chosen to withdraw,  while others had changed their team partner. However this was soon sorted out and we started with eight teams on time. 

The five judges awarded one bronze to the winners who were Brad Tellam and Peter Janes ( Below) from the Royal Australian Air Force based in Katherine. The team had travelled down the 400 k for the competitions and much to their delight winning a just reward for their effort. Thank You TY, Thank You NT Staff for great help.  

My next report will be just after the scheduled competition on 19th July in South Australia. That is, if I survive the 1.40 Am flight out of Darwin to Brisbane then change planes for the Melbourne leg, arriving at some ungodly hour tomorrow.  And now just received the bad news as I Sit in the airport , Here since 11.30 pm waiting for the 1.40 AM flight, when I have just been informed that the leg from Brisbane to Melbourne has been cancelled and I have to go from Darwin to Brisbane then onto Sydney and than to Melbourne and ETA is Midday tomorrow Bloody Nestle Golden Chefs Hat. A 15 hour trip.  The planning for the finals have commenced and planned to be released in early August. Be Ready - Train - get ready  Regards
