Competition


ACF ACT believes that cooking competitions provide an important development opportunity for chefs and apprentices.


Secondary Schools Competition 2008

As the President of the ACF, ACT chapter, it was a privilege to once again partner with the Student to Industry program, and the CIT, to create the foundations required to run this essential event. This year's competition was a roaring success with 13 schools, 38 participants, the biggest yet and we expect next year to be even bigger. It's important for these young and vibrant students who are passionate about their cooking receive the right training. And that they are nurtured into this first transitional step, introducing them to the positive and amazing opportunities in our fantastic industry.


On behalf of the ACF I would like to congratulate all the students, participating is one large step forward and I applaud you all.

Achievements

Australian National team in Canberra

The Australian National team held a dinner at Royal Canberra Golf Club on the 16th of June 2008 to trial their dishes for Culinary Olympics

The evening was hosted by our very own Continental Director of Waacs Mr Glenn Austin, raising considerable funds for this very expensive exercise, a truffle was auctioned along with a dinner to be cooked in your home by Team member and food & beverage manager of the Royal Canberra Golf Club Mr Neil Abrahams, The time money and effort that goes into organizing and training for these events in phenomenal and considering all team members hold highly demanding and profile positions its even more astounding, Good Luck Guys and I am very pleased to say there is a lady on the team

Truffles, Truffles and More Truffles

The Australian Culinary Federation ACT, Flavours Culinary Centre and the newly formed Australian Truffle Growers Association had a truffle workshop on Sunday 15th July 2007. The workshop was very informative, with discussion on how truffles are grown, harvested, stored, sold and prepared. There were demonstrations with Jan Gundlach of Flavours and Neil Abrahams of Royal Canberra Golf Club, then afterwards guest where treated to truffle tastings and local wine matchings. The workshop was such a success a second was needed and will be held on the 22nd July. There are only 5 places left so if you wish to join in, book now through Jan at Flavours. The ACF and the Truffle Growers plan to hold an annual event here in Canberra every year so look out for it, this black treat is one not to miss.

Gary Farrell Competition Workshop

We had the Competition Workshop again with Gary Farrell and a big thanks needs to go to Gary for giving up his time freely and parting with some of his Competition knowledge, all who attended gained a lot.
