ACF Australia announces WACS Certified CHEFS Program

 A global qualification that will be recognized in over 80 countries by World Association of Chefs Societies  and its eight million members will be introduced into Australia in 2007. An initiative by the then ACF president Glenn Austin has resulted in ACF Australia for the past two years working towards introducing  the program into Australia where Australian chefs can apply for the assessment  of their experience and be tested on their knowledge for the credential “WACS Certified Chef  and if successful be permitted to be use the designation (WCC)”. The test will include: Cookery, Bakery, Food Safety, Supervision, OH@S, and Nutrition.  . A preliminary board who will manage the introduction of the program into Australia is Glenn Austin, Continental Director WACS Peter Wright, President ACF  and Chaired by George Hill who is on the World Association Of Chefs Societies Education Committee.  The Australian management board is expected to expand when Australian certified chefs are verified.  ACF plans to conduct WACS Certified tests for chefs (which have to be supervised) in 2007 to be available  at each Australian Capital City following the regional Nestle Golden chefs program. The Australian Culinary Federation considers that a certified chefs certificate is a globally transferable and explicable  standard of knowledge as a chef and will provide employers with evidence of a chefs professional ability.  To apply for the credential and test the applicant must have:  Studied in a formal apprenticeship program or culinary (catering) certificate, diploma or degree program with a minimum of seven years as a working chef: sous chef, chef de cuisine, Garde manger or executive chef, or has more than 10 years of experience at the working chef level: sous chef, chef de cuisine, Garde manger, or executive chef. In addition candidates will be required to provide evidence of three major subject areas: nutrition, sanitation and kitchen management As a continuous improvement process candidates will be required to renewed certification every five years with renewal determined by improvements to their career through seminars courses, competitions and many other approved professional development activities.
