Welcome to ACF National

Australian Culinary Federation Membership Values

The Australian Culinary Federation is the national organization representing professional Chefs, Cooks and Apprentices. We seek to participate and advise in the establishment, maintenance and improvement of national and international culinary standards.

Australian Culinary Federation membership provides members access to our vast network via the intrinsic web we weave, through state chapters, regional groups, social events, competitions, and interest groups, allows all members to network with colleagues and participate in the federations work.

Nothing surpasses the friendships, the relationships, the creativity, the personal development, career opportunities and the satisfaction of being among a group of comparable people who have chosen The Australian Culinary Federation as there own. By association with the ACF you will be able to strengthen your network creating huge opportunities for yourself individually and in business to demonstrate your support and camaraderie for the Australian Food Service Industry..

IM BACK

Just back from China been away one month the trip was fantastic the Great Wall is an amazing sight and the Forbidden city with its 9,999.09 rooms
also in Shanghai the Maglev train doing 430 klm per hour is a trip worth doing.
took an overnight train ride to Xi 'an to see the Terra cotta Warriors its a huge archaeological sight
We ate some fantastic food while we were there from all regions some very weird and some great , also we were honored to be invited to a one month old child's birthday party( like a christning) were 200 people sat down to 29 different plates of food from suckling pig to pigeon soup that looked and tasted a lot like beef consomme but in the bottom of the pot were baby pigeons, also black chicken and to finnish (frogs spawn) Tapioca all washed down with Great Wall red and white wine and french conac.
While in Guangzhou met up again with a Vietnamese chef who trained in france and owns a small french restaurant and has been honored by france twice for his contribution to french cooking in china.
We also found Australian wine to be very cheap in china and Guangzhou is the place for shopping anything you wish for
Two and a half hours coach ride and you are in Macau with all its tacky casinos including Crown.
then on to Hong Kong for our last leg of the trip ,H. K. changes every time i go there so got lost a few times but our last night saw us at the Peninsular Hotel for some excellent fine dinning.

It feels surreal that we get back and Master chef Australia are in H.K.at the langham place hotel no less as it was only days ago we were there looking at the markets etc

But while talking about master chef why oh why is it that they go into a kitchen were the brigade are wearing hats and they don't

and who's stupid idea was it to stick brand new chefs knives into the chopping boards these looks don't help our industry one bit

if my aging brain recalls correct the English version of master chef they wore chefs jackets and head gear all the time.

Cooking on a navy ship in street cloths and just an apron what were they thinking of, at least the Navy made them wear hats good on them
