WHAT INSPIRED YOU TO BE A CHEF?

I am lucky, I knew from an early age (4-5 years old) that I wanted to be a Pastry Chef, as I used to live next door to a pastry shop. My father is a plumber & my grand dad was in the coal industry - I knew it wasn’t for me.

Always sampling and the smell in the kitchen drew me to it!

WHAT WAS THE FIRST MEAL YOU COOKED & WHAT AGE?

I think it would be with my Grand Ma, probably doing avocado with shrimp mayo, she used to do it especially for me, Bless…

WHAT IS YOUR FAVOURITE INGREDIENT?

Too many to mention, but will start with chocolate!
WHAT IS YOUR WORST COOKING DISASTER?

I don’t recall a disaster in the kitchen, but on my first day when doing work experience at age 15, I’d been ask to bring the trolley with all the Danishes to the shop, and so excited, the boss didn’t have time to warn me about the broken wheel! There were 10 trays of fresh croissants & pain au chocolat on me & on the floor! OOPS!!!

My Grand Parents, Godmother & Godfather

WHAT MAKES YOU LAUGH?

Easy, little jokes, life is too short & we take everything for granted, life is Amazing…

WHO INSPIRES YOU THE MOST?

Dalai Lama, Al Gore, Richard Branson, Bono and Nick Vujicic

WHAT IS YOUR FAVOURITE RESTAURANT?

I do not have one in particular. I have been so fortunate to have been to so many great restaurants. Now I prefer restaurants without all the fuss, but more honest, simple, good food, preferably Japanese, Thai, Greek or Middle Eastern food.

WHAT DO YOU EAT AT HOME?

Luckily, my wife cooks different food, but important for us, its organic veggies, quinoa, Kapai Puku seeds, free range eggs, freshly squeezed juice…

WHAT WOULD YOU TELL THE YOUTH OF TODAY TO ENCOURGE THEM TO JOIN OUR INDUSTRY?

Firstly, you need to be driven by passion, creation is endless. Get a positive role or two in the kitchen and follow them, don’t get distracted by too much fun!

At an early age, I would have thought, “yeah whatever”, but now I’d listen more…….LOL!
