Some photos from our thank you cocktail function for the sponsors who donated money for us to send our chefs here in W.A. to Sydney for the culinary challenge. Where we had 21 chefs compete and won 19 silver 14 gold and 3 bronze. Also Peter tiscchhauser was inducted as a life member achievement awrd for his dedication and ongoing work for the acfwa, and the western hospitality industry.

World skills served by international students

Whilst the federal government is calling on international students to form a representative body to crack down on exploitation and rorts in the overseas student market *, two West Coast Academy of Hospitality & Tourism students have formed an alliance of their own in the culinary world.

“I’ve had lots of jobs and done lots of things in my life just because I was qualified but this is different, I do this because I love it,” said 34-year old Philip Franklin from Britain who joined forces with Japanese student Momoe Oba among others to compete in the Sydney Culinary Challenge from 7-10 September.

Judged on table presentation, menu knowledge, full a la carte service and customer interaction, Philip and Momoe claimed gold in the front of house category before turning up the heat in the kitchen, claiming gold in the individual entree category, gold and silver in the individual dessert category and silver in the Chef/Commis category with their lecturer David Smith.

“Instantly you want to get gold and get to the top but when you do win, the sense of team achievement just takes over. To come out with what we’ve got just blows our mind,” said Philip who left his high-paid job as a senior sales engineer to immigrate to Australia two years ago with his wife and two children.

Like Momoe, Philip’s passion for hosting dinner parties at home and cooking for his family led to him studying a Certificate III in Commercial Cookery and Certificate IV in Hospitality Management at the West Coast Academy of Hospitality and Tourism. Philip will soon commence employment with Joondalup Resort as their breakfast chef and one day hopes to open his own establishment.

Overall the West Coast Academy of Hospitality & Tourism claimed 14 gold, 19 silver and 3 bronze medals in the competition and was named “Most Outstanding Establishment”. Academy lecturer, Chad Tilbury, was appointed Maitre’d for the world final of the Global Chefs Challenge to be held in Chile in January 2010 by the World Association of Chefs Societies.

Executive Director of the Academy Patrick O’Brien congratulated the students and staff who competed in the 3-day competition.

“Our talented front of house students and staff, chefs and apprentices have world class skills that are being recognised on the world stage and I congratulate each and every one of them for their outstanding achievements.”
