DESCRIPTION:Regional & Metro Cook-offs \nPre-Competition\n15 Minutes prior to start\, ensure you are all dressed in uniforms & ready to start.\n60 Minutes – introductions & competition rules explained\, before heading into the kitchen. \nYou MUST bring the following documentation with you on the competition day\n• 1 x typed copy of all recipes for your menu using the recipe template\n• 2 x typed copies of your menu using the menu template\nThe above to be printed on white A4 paper and presented in a clear plastic A4 pocket\nNO FOLDERS/BINDERS/STANDS/FRAMES/PICTURES etc.\n• Photo ID \nIn Kitchen – Set up\n60 Minutes – select ingredients and set up allocated workstations – No chopping\, no cooking\, only ingredient collecting & measuring & bench set up. \nCompetition – Cooking Begins\n2.5 hours to prepare and present 2 covers of each course:\nMain (Hot; Protein with appropriate accompaniments) &\nDessert (Hot or cold)\n60 Minutes from commencement of competition all ingredients are removed from the competition.\n100 minutes from commencement of competition Main Course service for 10 Minutes.\n140 minutes from commencement of competition Dessert service for 10 Minutes.\n150 Minutes from start of Competition completed. \nClean Down\n\n60 Minutes kitchen clean down. \nMORE INFORMATION

Throughout the year\, top apprentices and culinary students from each state and territory compete in their respective regions. The best from each apprenticeship year and student section are selected to converge and vie for the title of overall winner. The NAC’s reach is extensive\, impacting over 4\,000 culinary students and educators and linking to more than 10\,000 chefs nationwide. State selections for the top four apprentices/students from each category will commence in May.
