The Australian Culinary Federation is rallying behind Chef Leslie Chan and young chef Isabel Nicole Aguas (Koi) as they prepare to represent Australia at the 2026 Global Chefs Challenge Finals in Wales this May.

Before they compete on the world stage, you have the chance to experience the exact four-course menu they will present.

Leslie brings more than 25 years of professional kitchen experience. His career began at the iconic The Peninsula Hong Kong before he moved into Melbourne’s luxury hospitality sector. Today, as Corporate Chef for Mrs. Tran’s Kitchen, he continues to shape standards and mentor emerging talent.

Alongside him, Isabel Nicole Aguas (Koi) represents the next generation of Australian chefs stepping into international competition.

We are hosting an intimate dinner limited to just 12 guests. Leslie and Koi will cook and present their full competition menu in rehearsal format — the same structure, timing and pressure they will face in Wales.

This is a rare chance to see what goes into representing Australia at the highest level.
